I absolutely LOVE peas! This cold Asian pea salad is a great healthy salad bursting with flavor and perfect as a side dish. I love that it is cold and there are so many different textures in it. The dressing is sweet with a sesame taste that pairs perfect with the different peas. I added alfalfa sprouts because I couldn’t find bean sprouts but I think the bean sprouts would have been a better option. If you do use alfalfa sprouts, I would recommend adding them to the salad only when you are going to eat the salad so that they don’t get soggy. Also, I used all frozen peas just because there were no fresh peas available here in Pittsburgh but fresh would probably be better. You can add some grilled shrimp to make it a meal.
