I’m sure you all have probably seen these baked eggs all over the internet by now and you may be wondering why I even bother putting them on my blog.  Well, I just now got around to trying them out and found them to be so delicious and easy and also a perfect make ahead breakfast for the week.  So I wanted to share that with you all in case you have not yet had this experience yourselves.  I cooked mine a lot longer than most recipes called for because I did not want ANY runny egg whites.  I ended up cooking them too long because not only were the whites not runny but neither was the yolk (but they were still delicious, I just had nothing to dip my toast in).  I would suggest cooking them no longer than 20 minutes (mine were in for a good 20 minutes).  Oh and they are so versatile as far as what all you put in them.  I used some leftover sautéed mushrooms and onions with rosemary because that’s what was leftover in the fridge but you can use spinach, peppers, onions, scallions, you name it.  You can even use whatever spices you like (I really liked the rosemary!).

Like I said, I finally got around to making these, not that they are hard but I usually don’t wake up very early on the weekends.  Since I work a later shift, my body is just used to waking up late and going to bed late.  This morning I was up at 6:30 am when it was still dark to throw some stuff in the crockpot for dinner.  My aunts are coming over for dinner and I am super excited about that!!!  I decided to go the healthy route and make chicken taco bowls and my sister is making a salad.  So I got up to make that, went back to bed for a little (I needed to), and then got up and made these delicious little guys.  I just love Saturday mornings, I got to just do what I wanted at my own pace (even enjoy some tea!).

By the way, I spotted a new Chobani flavor at the store and HAD to try it.  It’s the pear flavored Greek yogurt and let me tell you, it is amazing!!!  I used to not care much for pears until the past few months actually.  I’ve had some amazing juicy Asian pears from Trader Joes and they have totally turned me into a pear lover!  Thought I should share that :)

Baked Eggs in a Ham Cup


12 large thin slices deli ham
12 large eggs
1 ½ cups sautéed mushrooms and onions with rosemary (already made)
Salt and pepper to taste
¼ cup parmesan cheese, freshly shredded
Cooking spray


Preheat the oven to 350 degrees and spray a muffin tin
Lay a slice of ham in each muffin (hole?), pushing down gently to create a cup
Layer the bottom of each ham cup with the mushroom and onion mixture (not too much)
Crack an egg open into each ham cup and season with salt and pepper
Place in the oven and cook for 15-20 minutes until preferred doneness
Sprinkle with Parmesan cheese and enjoy!
