Happy New Year Everyone!!! I hope everyone had a great 2012 and I wish you all a wonderful and blessed 2013!!! I know that I’m looking forward to it! And what better way to start it off that with quesadillas, right? Weird? I actually am having pork today but thought I’d post these quesadillas anyway.
If you’re looking for something to make for a group of people, quesadillas are a great choice. They are pretty easy to make and who doesn’t love these little guys??? Such great flavors and they can be used as finger food. You can use chicken, shrimp or steak. I went with chicken and shrimp here with peppers and onions (always a great combo). You really can cook your chicken and shrimp any way you like beforehand, I decided to bake my chicken with my spice mixture and sauté the shrimp in enchilada sauce. You could also grill them.
Serve them up with some sour cream, guac and/or salsa. You could also serve some chips and queso on the side!
Chop up the veggiesThrow the veggies into the skillet on high heat until browned and softMeanwhile cook the chicken…and cook the shrimpIt helps to have everything all prepared and ready to go…they cook fastPlace a tortilla in the skillet with cooking spray and cover half with cheeseNext comes the veggiesThen top with the meatAdd more cheese, fold the tortilla in half, and press down until cheese meltsFlip the quesadilla over until the other side is golden brown and the cheese is nice and meltedJust look and that gooiness!!!Serve with sour cream, guacamole, and/or salsaDeliciousness!
1 lb gulf shrimp, cooked (peeled and deveined, tails removed)
8 Large tortillas (I used 100% whole wheat from Trader Joe’s)
4 cups shredded cheese (I used half of a Mexican mix and half shredded jalapeno Monterey jack)
1 red bell pepper, sliced
2 green bell peppers, sliced
1 red onion, sliced
2 Tbsp extra virgin olive oil
Instructions
Heat olive oil in a large skillet over medium high heat and throw in the peppers and onions; you want them to brown so don’t touch them for a few minutes; cook for about 7 minutes or until soft and brown; set aside
Clean the skillet or get another and spray with cooking spray
Heat skillet over medium heat and add a tortilla
Cover half of the tortilla with shredded cheese then peppers and onions, then chicken or shrimp or both and a little more cheese; Fold the empty half of the tortilla over and press down to make it stick; cook for about 2-3 minutes checking to make sure it is not burning on the bottom
Flip the quesadilla over and cook another 2 minutes until cheese is melted and tortilla is golden brown
Repeat with the rest of the ingredients
Cut into 3 triangles and serve with sour cream, avocado and/or salsa and enjoy!
