Energy Booster Quinoa SaladSometimes I get so bored with the same old green salads and I bet most of you do too.  I came across a Superfood Salad on Iowa Girl Eats blog and it really caught my eye.  I loved the idea of a salad without greens but with quinoa instead so I took some of these ideas and adapted a bit.  This salad will definitely be added to my weekly meals more often.

I absolutely love the nuttiness of the quinoa with the freshness of the cilantro and onions.  The black beans, quinoa and corn really help to keep you full and give a nice natural energy boost.  I also added in some banana peppers and jalapenos to give it a little zing.  You can add some shrimp, chicken, or salmon to make it a complete meal and add a little more protein also.

Ingredients

For the salad:
½ cup dry quinoa
1 cup water
1 small red onion, sliced thin
1 can black beans
2 cups frozen corn, thawed
1 cup cilantro, chopped
1 banana pepper, sliced thin
2 jalapenos, chopped
½-1 cup of chopped walnuts
For the Dressing
2 Tbsp lemon juice
Juice of 1 lime
2 garlic cloves, finely minced
1 packet Stevia
Salt and pepper to taste
6 Tbsp extra virgin olive oil

Instructions

Cook quinoa as instructed by the directions on the package
Once quinoa has cooled to room temperature, combine it in a large bowl with the rest of the salad ingredients
For the dressing, simply combine the lemon juice, lime juice, garlic, stevia, salt and pepper in a small bowl and whisk together. Keep whisking as you slowly drizzle in the olive oil.
Pour the dressing over the quinoa salad and mix to combine
Refrigerate for an hour or two and serve cold
