How to Make Brussels Sprouts Taste Delicious

Today was yet again another perfect day full of productivity.  It was so perfect outside, I was so excited to get to the trail and get my run in.  It was way too beautiful not to be outside doing something today.  I had a great run and took a few pictures along the way just because it was so nice!

When I got home from my run I was starving and craving some roasted Brussels sprouts that I just got from Trader Joe’s the other day.  They had tons of them still on the stalks, how could I pass them up???  Brussels sprouts have become one of my favorite vegetables lately, ever since I discovered roasting them.  Most people probably think of Brussels sprouts and automatically think bad thoughts.  These cute little guys are delicious when roasted or sautéed with bacon and shallots or walnuts and gorgonzola.  Not only do they taste great but they have a large amount of cancer fighting components and tons of Vitamin K and Vitamin C!  For more information on the enormous amount of health benefits you can check that out here.  So next time you are out at the grocery store, pick some up and include them in your next meal.

Don’t let them scare you, they have so much potential
Give them a nice rinse after peeling off the outer layer
See? Nice and clean and ready to be made into some amazingness
Cut each in half like this so they can get a nice caramelization
Mix sprouts and shallots with the olive oil, salt and pepper and place in a single layer on a baking sheet
All ready to go!
Perfectly caramelized and ready to eat!



Roasted Brussels Sprouts

Yield: 4-6 servings

Roasted Brussels Sprouts


1½ pounds Brussels sprouts
1 shallot, sliced
2 Tbsp extra virgin olive oil
1 tsp salt
½ tsp black pepper


Preheat oven to 450 degrees
Trim stems off of Brussels sprouts and remove outer leaves
Rinse Brussels sprouts and dry off completely
Halve the Brussels sprouts and place in a bowl with shallots. Add olive oil, salt and pepper and toss to coat
Layer the Brussels sprouts and shallots in a single layer on a baking sheet and bake for approximately 15-20 minutes until carmelized, turning after 10 minutes
